Autumn Recipe to Embrace the Season

Cozy pumpkin soup with ginger and coconut milk—packed with antioxidants and a true immune booster for autumn.

▢ 1.2 kg Hokkaido pumpkin 

▢ 1 piece of ginger – about the size of a thumb 

▢ 1 onion 

▢ 2 tbsp butter 

▢ 800 ml vegetable stock 

▢ 400 ml coconut milk - 1 tin 

▢ 100 ml orange juice 

▢ salt 

▢ pepper 

▢ curry

  1. Halve the pumpkin, scoop out the seeds, and cut the flesh into large cubes. Finely chop the ginger and onion. 

  2. In a large saucepan, melt the butter over medium heat and sauté the pumpkin, onions, and ginger for about 5 minutes. 

  3. Add the vegetable stock, coconut milk, and orange juice. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender. Blend everything until smooth. 

  4. Finally, season the pumpkin soup with salt, pepper, and curry to taste.

Creating a delicious vegan pumpkin soup takes just two simple steps:

  • Prepare the soup: Begin by boiling the pumpkin, ginger, vegetable broth, and coconut milk for 15 to 20 minutes.
